Here’s a fabulous, protein filled, healthy recipe you can use to replace the standard holiday stuffing recipe.  Complete with nutrients and lots of flavor, but missing the gluten, dairy, soy, animal proteins, and unhealthy non-sense.  🙂

RECIPE

Ingredients:

  • 3 cups water
  • 1 1/2 cps quinoa
  • 1 3 floz orange juice
  • 1 1/2 tsp evoo
  • 2 tbsp poultry season
  • 1 1/2 tsp sea salt
  • 1 1/2 tsp black pepper
  • 6 tbsp sliced almonds
  • 1 1/4 oz parsley chopped
  • ¼ lb dried cherries
  • ¼ lb apples, diced

Directions:

  • Cook quinoa with liquids and spices.
  • Mix in remaining ingredients.

Poultry Seasoning

  • 2 tsp rubbed sage
  • 1 1/2 tsp thyme leaves
  • 1 tsp marjoram leaves
  • 3/4 tsp ground rosemary leaves
  • 1/2 tsp ground nutmeg
  • 1/2 tsp finely ground black pepper
  • Combine all of the spices together in a ziplock bag and shake to mix
